Recipe // Blueberry Chocolate Brownies

We currently have about 10kg of blueberries in our freezer. You guys, that's a lot. It took a really long time to wash all those berries.

But the blueberry season is almost over, and we wanted to stock up for the winter! Berries have lots of antioxidants in them, which is good for you and stuff. 

I'm making the most of them and baking up a storm. I feel a bit like Bubba in Forrest Gump - how many different ways can you bake blueberries? A lot, apparently.

This morning I made these blueberry chocolate brownies using this recipe, and they are delicious! They're really simple to make as well. We ate them warm, with plain yoghurt on the side.

Blueberry Chocolate Brownies

Ingredients

  • 150g butter
  • ½ cup cocoa powder
  • 3 eggs
  • 1 cup sugar 
  • 1 teaspoon vanilla essence (I used imitation essence)
  • ½ cup flour
  • 1 teaspoon baking powder
  • 125g blueberries

Method

Melt the butter and stir in the cocoa powder until well mixed, set aside.

Beat eggs, sugar, and vanilla until thick and creamy.

Fold the egg mixture into the chocolate mix.

Sift flour and baking powder into the brownie batter.

Pour into a greased brownie tin and sprinkle 125g of blueberries over the top.

Bake at 170 celsius (340 F) for 30 – 40 minutes until cooked through.

Moments of beauty, love, miracles.

I want to notice these more. To revel in them, to share in the beauty. 

Life is these moments. 

Don't let them go unnoticed.

This is my favourite summer skirt - it's such a punchy colour! I made it over a year ago (I was inspired by this Rag & Bone skirt) but it's taken me a while to figure out how to wear it (you might remember me thinking about it over here). 

Now I don't know why it took me so long, because when in doubt the rule is always pair with a neutral. And when you can't decide on a neutral, just go with both of them. 

As a side note, I really can't do a model/blogger face. You know those serious & stylish pouty faces? Nope, I just look really angry. So all my style posts on this blog are going to include my giant cheesy grin, 'cos that's all I've got folks.
