Recipe // Blueberry Chocolate Brownies

We currently have about 10kg of blueberries in our freezer. You guys, that's a lot. It took a really long time to wash all those berries.

But the blueberry season is almost over, and we wanted to stock up for the winter! Berries have lots of antioxidants in them, which is good for you and stuff. 

I'm making the most of them and baking up a storm. I feel a bit like Bubba in Forrest Gump - how many different ways can you bake blueberries? A lot, apparently.

This morning I made these blueberry chocolate brownies using this recipe, and they are delicious! They're really simple to make as well. We ate them warm, with plain yoghurt on the side.

Blueberry Chocolate Brownies

Ingredients

  • 150g butter
  • ½ cup cocoa powder
  • 3 eggs
  • 1 cup sugar 
  • 1 teaspoon vanilla essence (I used imitation essence)
  • ½ cup flour
  • 1 teaspoon baking powder
  • 125g blueberries

Method

Melt the butter and stir in the cocoa powder until well mixed, set aside.

Beat eggs, sugar, and vanilla until thick and creamy.

Fold the egg mixture into the chocolate mix.

Sift flour and baking powder into the brownie batter.

Pour into a greased brownie tin and sprinkle 125g of blueberries over the top.

Bake at 170 celsius (340 F) for 30 – 40 minutes until cooked through.

Recipe // Blueberry Pancakes

This is my very first recipe post on this blog and I'm really excited about it! I'm planning on making it a regular feature.

When I put in the time and effort, cooking and baking are things I actually really enjoy. So I'm hoping to use this space to experiment with new recipes and share the really yummy ones.

If you follow me on twitter then you may have seen that I've been blueberry picking! I went yesterday afternoon with my Sister-in-law and it was a lot of fun. Between the two of us we picked 6kg of blueberries! I've been snacking on them today, but I've also got a few different recipes planned. I want to put them to good use!

At the orchard they gave out a few different recipes, so this morning for breakfast I made blueberry pancakes. Pancakes are always a huge hit in my house!

I made the batter and my husband cooked them - the cooking part was a bit tricky because the blueberries were huge which may it harder to flip the pancakes, but after a bit of trial and error we got there.

We served them with lots of maple syrup and extra fresh blueberries. It was a very sweet breakfast!

Blueberry Pancakes

  • 1 cup milk
  • 2 Tbsp sugar
  • 1 cup plain flour
  • 1 egg
  • 3 Tbsp oil
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 cup blueberries

Beat together all ingredients, then fold in the blueberries.

Spoon the batter onto a pre-heated & buttered frying pan, and cook pancakes on a medium to low heat

When bubbles appear of the surface, flip and cook the other side until pancakes are golden brown
